GF Chocolate Chip Cookies

This recipe is adapted from my Grandma's famous recipe blended with a traditional recipe taken from a Better Homes and Gardens cookbook.  Everyone I give these to can't believe they are gluten free!


   1/2 cup butter
   1/2 cup shortening
   1 cup packed brown sugar
   1/2 cup sugar
Mix using a stand mixer on low until smooth then add:

   2 eggs
   1 1/2 tsp vanilla
Mix again until smooth.  In a separate bowl or bag mix the following:

   2 1/2 cups Mama's Coconut Blend flour
   3/4 tsp xanthan gum
   1 tsp baking soda
   1/2 tsp salt
Once the flour mixture is combined, add it to the stand mixer and mix on low, again until smooth.

Finally add the chocolate chips and nuts to your preference.  Mix on low until well combined.

   24 oz chocolate chips
   1 cup chopped walnuts or pecans (I omit but some people like nuts)
Grease your cookie sheets with a small amount of Crisco, spread with a  paper towel.
Bake at 375* for 10-12 minutes.  Swap cookie sheets at 6 minutes (from top to bottom rack).
